Curry - cooking recipe

Ingredients
    1 - 1 1/2 lbs. beef or chicken, cut in 1-inch chunks
    1/2 large onion, chopped
    1 c. carrots, diced
    1 c. mushrooms, sliced
    1 c. new potatoes, diced
    3 c. water
    1 pkg. S&B Curry mix
Preparation
    In a large skillet, fry onions and meat in 3 Tbsp. oil.
    Add vegetables and stir fry for 5 minutes.
    Add 3 c. water and bring to a boil.
    Break curry mix into pieces and stir in till dissolved.
    Bring to a simmer, cover and stir occasionally.
    Cook and stir till desired consistency.
    Serve over rice.
    Makes 4 cups.
