"Spanakoryzo" - Spinach And Rice - cooking recipe

Ingredients
    1 c. uncooked rice
    1 medium onion, chopped
    1/2 c. olive oil
    2 c. boiling water
    1 1/2 tsp. salt
    1 lb. fresh spinach
Preparation
    Saute rice and onion in olive oil, stirring occasionally, 15 minutes.
    Add boiling water and salt; cover and simmer 10 minutes. Wash spinach; cut in 1/2-inch lengths.
    Add to rice.
    Mix thoroughly; cover and continue to simmer, stirring occasionally, 15 minutes.
    Makes 4 to 6 servings.
