Chinese Fried Rice - cooking recipe

Ingredients
    2 1/3 c. cooked brown rice (cold)
    1 Tbsp. corn oil
    2 egg whites, lightly beaten
    1/2 oz. lean turkey ham, cut into fine slivers
    1/4 c. frozen peas, defrosted
    3 Tbsp. finely chopped scallions
    1 1/2 Tbsp. low sodium soy sauce
    1/4 tsp. black pepper
Preparation
    Separate the rice with a fork.
    Add a tablespoon or two of water if necessary to moisten and separate; set aside.
    Heat the oil in a frypan.
    Add the lightly beaten egg whites, ham and peas and cook on medium heat for 1 minute.
    Add the rice and stir to combine the ingredients.
    Add the scallions, soy sauce and pepper and cook for 1 minute.
    Yield:
    Makes 8 (1/3 cup) servings.
