Chinese "Not Fried" Rice - cooking recipe

Ingredients
    vegetable cooking spray
    1/2 c. finely chopped onion
    1 Tbsp. red cooking wine
    1 Tbsp. reduced-sodium soy sauce
    1 tsp. sesame oil (dark)
    4 drops hot sauce
    1 c. uncooked long grain converted rice
    1/3 c. diagonally sliced green onion
    1 Tbsp. pine nuts, toasted (optional)
    2 c. low-sodium chicken broth, undiluted
Preparation
    Coat a medium saucepan with cooking spray.
    Place over medium heat until hot.
    Add onion and saute 2 minutes or until tender. Add chicken broth and soy sauce, cooking wine, sesame oil and hot sauce; bring to a boil.
    Stir in rice, cover, reduce heat and simmer 25 minutes or until rice is tender and liquid is absorbed. Remove from heat.
    Stir in green onion and pine nuts.
    Yield: 6 servings.
