Brian'S Favorite Chicken - cooking recipe

Ingredients
    1 1/2 lb. boneless chicken breasts, pounded thin
    1 1/2 c. flour, seasoned with salt and pepper
    olive oil (about 1/4 c.)
    1 1/2 c. chicken stock
    1 Tbsp. Dijon mustard
    3 Tbsp. butter
    8 oz. goat cheese (Montrachet)
    1 large jar roasted red peppers (I roast my own, but jarred work just as well)
Preparation
    Dredge each chicken breasts in the seasoned flour. Shake off excess. Fry in olive oil until golden. Keep chicken warm in a 250\u00b0 oven while preparing sauce.
