Fried Chicken And Milk Gravy - cooking recipe

Ingredients
    3 to 3 1/2 lb. ready to cook chicken pieces
    1/3 c. butter
    1/3 c. Crisco
    1 to 1/2 c. flour
    1 1/2 Tbsp. salt
    1/4 tsp. pepper
Preparation
    Cut chicken breast in two parts.
    Blend salt, pepper and flour.
    Dredge chicken pieces, working flour into each piece, leaving no moist spots to spatter and lose juice.
    In heavy skillet (with lid), melt butter and Crisco on medium heat.\tPlace meaty pieces in skillet first; slip in slimmer parts as they brown.
    Don't crowd pieces.
    Brown well on one side; with fork or tongs, turn and brown other side of chicken pieces.
    Do not pierce chicken.
    Place in baking dish or pan.
    Add 2 tablespoons water to baking dish; cover with foil and place in oven at 325\u00b0 for 40 to 60 minutes.
    When you cut thickest part to the bone, no pink should show.
    For crisp chicken, uncover last 15 minutes.
