Microwave Tapioca Pudding - cooking recipe

Ingredients
    3 Tbsp. Minute tapioca
    5 Tbsp. sugar
    1/8 tsp. salt
    2 c. milk
    1 egg yolk
    1/2 tsp. vanilla
    1 egg white
Preparation
    Mix tapioca, 3 tablespoons sugar, salt, milk and egg yolk in 1 1/2-quart glass casserole.
    Let stand 5 minutes.
    Cook in microwave about 3 minutes; stir, then cook about 2 1/2 to 3 minutes, until mixture comes to a full boil.
    Stir in vanilla.
    Let stand at room temperature while beating egg white until foamy.
    Gradually add 2 tablespoons sugar; whip to soft peaks.
    Fold egg white into hot mixture.
