Pressure Cooker Vegetable Soup - cooking recipe
Ingredients

1 Tbsp. canola oil
1 large onion, chopped
3 cloves garlic, chopped or minced
2 large celery stalks, chopped
2 medium carrots, chopped
1 medium sweet potato, chopped
3 medium potatoes, chopped and peeled
3 stalks broccoli (whole)
1 (14 1/2 oz.) can fat-free chicken broth
1 (14 1/2 oz.) can water
1 (14 1/2 oz.) can peeled tomatoes, squished
salt and pepper to taste
Preparation

Saute onion, garlic and celery in a pressure cooker in canola oil.
Add all other ingredients.
Cook 15 minutes with pressure cooker top rocking.
After pressure diminishes and pot can be opened, serve with any good bread.
