Mexican Meat Loaf - cooking recipe

Ingredients
    4 slices whole wheat bread, finely crumbled
    1 large onion, chopped
    1/2 green pepper, chopped
    1 lb. lean ground beef
    1/2 lb. ground pork
    2 large eggs, lightly beaten
    1 (10 oz.) can tomatoes with green chilies
    3/4 tsp. salt
Preparation
    Cook onion and green pepper in a nonstick skillet, stirring constantly, until tender.
    Stir onion and green pepper into bread crumbs.
    Add ground beef and remaining ingredients, mixing well. (Mixture will be soft.)
    Shape into a 12-inch loaf and place on a lightly greased rack.
    Place rack in a broiler pan.
    Cover loosely with aluminum foil.
    Bake at 375\u00b0 for 1 hour.
    Remove foil and bake an additional 20 minutes.
    Let stand 5 minutes.
    Makes 6 servings.
