Tex-Mex Ground Turkey Potato Boats - cooking recipe

Ingredients
    2 potatoes, baked and cooled
    1/2 lb. ground turkey
    1/2 c. chopped onion
    1 clove garlic, minced
    1 (8 oz.) can stewed tomatoes
    1 tsp. chili powder
    1/4 tsp. dried oregano leaves, crushed
    1/4 tsp. ground cumin
    1/4 tsp. crushed red pepper
    1/4 tsp. salt
    1/2 c. (2 oz.) shredded reduced-fat Cheddar cheese
Preparation
    Slice potatoes lengthwise in half.
    Scoop out center of each potato to within 1/4-inch of potato skin.
    Reserve potato for other use.
