Pumpkin Pie - cooking recipe

2 c. pumpkin
3 eggs, separated
1 c. brown sugar
1/4 tsp. salt
1/4 tsp. grated nutmeg
1/2 tsp. ginger
1/2 tsp. allspice
1/4 tsp. cinnamon
3 c. scalded milk
1 unbaked pie shell
Preparation

Combine pumpkin, egg yolks, brown sugar, salt and spices; add milk.
Beat 3 egg whites until stiff; fold into pumpkin mixture. Pour into unbaked pie shell.
Bake at 450\u00b0 for 10 minutes.
Reduce temperature to 325\u00b0; bake for 30 minutes longer or until pie tests done.
