Supremes De Volailles Vallee D'Auge - cooking recipe

Ingredients
    6 chicken breasts, boned and skinned
    2 Tbsp. butter
    lemon juice
    salt and pepper
    2 to 4 Tbsp. veal or chicken stock
    2 to 4 Tbsp. Applejack or Calvados (or use apple juice)
    1/2 to 3/4 c. heavy cream
    6 small slices Camembert or cheese of choice
    1 large apple
Preparation
    Skin, bone, trim and cut a pocket in the cutlet.
    Stuff each with a small slice of cheese.
    Press the edges closed.
    Butter a baking dish; set cutlets in it.
    Sprinkle them with salt and pepper and a little lemon juice; cover them with buttered parchment paper.
    Bake the cutlets in a 475\u00b0 preheated oven for 8 to 10 minutes.
