1 beef tenderloin
1 c. shredded Gruyere cheese
1/3 c. toasted chopped almonds
2 Tbsp. Dijon mustard
1/2 c. dried sour cherries
salt and pepper to taste
2 to 3 Tbsp. olive oil
1 to 2 cloves garlic, crushed
Preparation

To toast almonds:
You can toss them in a dry cast-iron skillet over medium-high heat for a few minutes, until they become fragrant and begin to take on a little color.
