Fried Chicken Of Arles - cooking recipe

Ingredients
    1 chicken, cut up
    1/4 c. olive oil
    1 c. dry white wine
    4 tomatoes, peeled and seeded
    2 whole cloves garlic
    salt and pepper
Preparation
    Cut up the chicken and brown the pieces on all sides in hot oil.
    Remove chicken and deglaze the pan by pouring the wine into it and, with a wooden spoon over medium heat, rubbing down all the good brown substances into the liquid in the skillet.
    Then add the tomatoes and garlic.
    Simmer until this sauce is somewhat reduced.
    Season with salt and pepper to taste.
