Cinnamon Apple Jelly - cooking recipe
Ingredients

3 lb. tart apples
3 c. sugar
1 drop oil of cinnamon
6 drops red food coloring
Preparation

Wash fruit; do not pare or core.
Cut in eighths, removing blemishes.
Barely cover with water; simmer until soft.
Strain juice through jelly bag.
Measure 4 cups of juice into large kettle.
Add sugar; stir until dissolved.
Bring to a full boil over heat.
Boil hard until syrup sheets off spoon, about 8\u00b0 above boiling point of water.
Remove from heat.
Skim off foam quickly. Add cinnamon and coloring.
Pour into scalded glasses.
Seal immediately with paraffin.
Makes three 1/2-pint glasses.
