Snow'S Smoked Pork Shoulder - cooking recipe

Ingredients
    2 (6 to 8 lb.) Boston butt pork shoulder
    1 lb. light brown sugar
    1/2 c. honey
    1 Tbsp. ground black pepper
    1 Tbsp. cayenne pepper
    1 Tbsp. crushed red pepper
    2 Tbsp. Worcestershire sauce
    2 tsp. salt
Preparation
    Remove all fat and skin off shoulder.
    Score 1 inch deep 2 inches apart on both sides.
    Mix all ingredients thoroughly.
    Add enough water (2 to 4 tablespoons) to make thick paste.
    Rub sauce on meat as much as will adhere to meat.
    Smoke in water smoker 12 to 16 hours at 225\u00b0 to 275\u00b0.
    Be sure to keep water in smoker at all times.
    A few hickory chips mixed with charcoal gives added flavor.
