Spiced Peach Butter - cooking recipe
Ingredients

                            18 medium ripe peaches, peeled and sliced
1/3 c. water
4 c. sugar
1 tsp. ground ginger
1 tsp. ground nutmeg
Preparation

                            In a large skillet, cook peaches in water until tender. Press through a sieve or process in a food processor. Measure 8 cups pulp. Return to kettle. Add sugar, ginger and nutmeg. Cook and stir over medium heat until thickened, about 30 minutes. Immediately ladle into hot jars, leaving 1/4-inch headspace. Adjust caps. Process for 10 minutes in a boiling water bath. Yield: 4 pints.
