Jalapeno Black Eyed Peas & Rice Casserole - cooking recipe

Ingredients
    1/2 c chopped onion
    1 tbsp melted margin
    1 lb lean ground beef
    2 - 15 oz can Trappey's Jalapeno Black Eyed Peas
    2 cups cooked long grain rice
    1- 16 oz can of tomatoes drained and chopped
    1 c sharp cheddar cheese, shredded
Preparation
    Saut onion in butter until tender.
    Add ground beef and brown. Stir in peas, rice, and tomatoes.
    Mix well.
    Spoon mixture onto a 2 qt. casserole.
    Sprinkle cheese in over top.
    Bake 350 degrees for 20 minutes or until cheese melt.
    Serves 6 to 8 people.
