Squash Fritters - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen sliced yellow squash
    2 eggs, beaten
    1/2 c. cracker crumbs
    1/4 tsp. pepper
    1 small onion, diced
    vegetable oil
Preparation
    Cook squash, drain and mash. Combine squash and next 4 ingredients. Pour oil to depth of 2-inches in a heavy saucepan. Heat to 375\u00b0. Drop squash mixture by tablespoon into oil. Fry until golden brown, turning once. Drain on paper towels. Serve immediately.
