Oyster Stuffed Mushrooms - cooking recipe

Ingredients
    18 large mushrooms
    2 1/2 doz. oysters, chopped
    1 clove garlic, crushed
    3 green onions, chopped (including the green tops)
    1/2 c. bread crumbs, mixed with 2 Tbsp. Parmesan or Romano cheese, grated
    4 Tbsp. butter, divided
    1 egg, beaten
    18 small slices Cheddar cheese
Preparation
    Cut stems out of mushrooms, leaving a niche for stuffing. Saute mushroom caps in 2 tablespoons butter; set aside.
    Saute green onions, garlic and chopped stems of mushrooms in 2 tablespoons butter.
    Add oysters and cook until oysters curl.
    Add breadcrumb-Parmesan cheese mixture, then bind with the beaten egg. Stuff mushroom caps.
    Place piece of Cheddar cheese on top of each mushroom and put under broiler for browning.
    Serves 6 (3 each).
