Golden Meatball Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1/2 c. fresh bread crumbs
    1 egg
    1 tsp. salt
    oil
    2 c. water
    1 c. uncooked rice
    2 large carrots, quartered
    1/2 c. chopped green pepper
    1/4 c. chopped onions
    1/2 lb. Velveeta cheese, cubed
Preparation
    Combine meat, bread crumbs, egg and salt; shape into 18 meatballs.
    Brown in small amount of oil on all sides in a large skillet.
    Drain.
    Add water, rice, carrots, green pepper and onions.
    Cover and simmer 25 minutes.
    Add Velveeta.
    Heat until Velveeta melts.
    Makes 4 to 6 servings.
