Zucchini Au Gratin - cooking recipe

Ingredients
    1 Onion, Chopped
    1 Potato, diced
    6 sm. Zucchini, sliced
    2 sm. or 1 lg. Tomato, diced
    1/2 lb. Cheddar Cheese, shredded
Preparation
    Saute the onion and potato in butter or bacon drippings until tender.
    Add zucchini and cook until tender, but not mushy.
    Add the tomato and heat through.
    Sprinkle with the cheese and heat until the cheese melts and coats the vegetables.
