Fruit Muffins - cooking recipe
Ingredients

1 c. Quaker Oats
1 c. flour
1 Tbsp. baking powder
1/2 tsp. cinnamon
1 c. skim milk
1/2 c. mashed banana (1 large)
1/2 c. raisins or cooked apricots or prunes
1/4 c. vegetable oil
1/4 c. firmly packed brown sugar
1 egg white
Preparation

Heat oven to 400\u00b0.
Line 12 muffin cups with liners, then combine oats, flour, baking powder and cinnamon.
Add combined remaining ingredients.
Mix until dry ingredients are just moistened.
Fill muffin cups 3/4 full.
Bake at 400\u00b0 for 20 to 25 minutes or until golden brown.
