Ingredients

2 c. sifted, unbleached white flour
1/2 tsp. salt
1 1/4 tsp. baking soda
3/4 tsp. baking powder
1 egg
2 1/4 c. 1% buttermilk
2 tsp. skim milk
1 Tbsp. safflower oil
Preparation

In mixing bowl, blend ingredients with a wire whisk, just enough to moisten.
Dip up batter with a large serving spoon. Bake on a preheated nonstick griddle.
Turn pancakes when top side is bubbly and a few bubbles have broken.
Flip only once.
Makes 20 pancakes.
