Chicken Pasta Salad - cooking recipe
Ingredients

2 to 4 chicken breasts
3/4 c. olive oil
8 tsp. red wine vinegar
3 tsp. Dijon mustard
1/2 tsp. black pepper
1 tsp. anchovy paste
1 tsp. dried basil
8 oz. spiral pasta
6 scallions, thinly sliced (everything)
1 c. diced black olives (2 little cans)
1/3 lb. grated fresh Parmesan
6 slices bacon, crumbled
2 to 4 chopped tomatoes
Preparation

Poach chicken for 15 minutes in a big pot.
Skin, bone and shred.
Combine next 6 ingredients for the dressing.
Pour 1/2 over chicken.
Reserve the rest.
Make pasta.
