Deluxe Chocolate Zucchini Cake - cooking recipe

Ingredients

2 c. unbleached flour
1 c. whole wheat flour
1 1/4 tsp. each: baking powder and baking soda
1 tsp. salt
1/8 tsp. cinnamon
4 large eggs
2 c. sugar
1 1/4 c. vegetable oil
3 oz. unsweetened chocolate, melted and cooled
1 1/2 tsp. vanilla extract
1/2 tsp. almond extract
1 c. chopped pecans or walnuts
1/2 c. raisins or chopped dates
3 c. coarsely shredded zucchini

Preparation

Place rack in center of oven and heat oven to 350\u00b0.
Butter a 12-cup Bundt pan or 2 (8 x 4-inch) loaf pans; dust lightly with flour.
