Eggplant Casserole - cooking recipe

Ingredients
    2 lb. ground beef
    12 eggplant slices (thick)
    1/4 c. chopped onions
    1/2 c. chopped bell pepper
    2 Tbsp. oil
    2 Tbsp. flour
    2 tsp. salt
    1/4 tsp. oregano
    2 cans tomato sauce
    1 1/2 c. sharp cheese, grated
    1/4 tsp. pepper
Preparation
    Peel and slice eggplant.
    Boil in water until tender, then drain.
    Cook beef in skillet with oil (if needed).
    Add onions and bell pepper.
    Cook, stirring, until nicely browned.
    Stir in flour, salt, pepper and oregano.
    Blend, then add tomato sauce. Arrange slices of eggplant in baking dish alternately with meat sauce and cheese.
    Repeat in layers with cheese on top.
    Bake at 300\u00b0 for 30 minutes.
    Serves 6 to 8.
