Zucchini Casserole - cooking recipe

Ingredients
    7 c. cut up zucchini or yellow squash (3/8-inch thick; I use 1/2 of both)
    1/4 c. chopped onion
    1 can cream of chicken soup
    1 (8 oz.) sour cream
    1 c. shredded carrots
    1/2 c. chopped bell pepper
    2 c. Stove Top stuffing mix plus 1/4 c. oleo
Preparation
    In large saucepan, boil squash and onions for 5 to 10 minutes. Drain well.
    In large bowl, combine soup and sour cream.
    Stir in carrots and bell pepper, then fold in squash mixture.
    Toss Stove Top mix with melted oleo.
    Spread 1/2 Stove Top mixture in baking dish.
    Top with squash mixture and remaining Stove Top mix.
