Carrot Zucchini Casserole - cooking recipe
Ingredients

1 lb. carrots, cut into 1/2-inch slices
3 to 4 small zucchini, cut into 1/2-inch slices
1/2 c. mayonnaise
2 Tbsp. grated onion
1/2 c. Italian bread crumbs
3/4 tsp. horseradish
1/4 c. melted butter
Preparation

Steam vegetables for 5 minutes.
Drain, reserving 1/4 cup liquid.
Combine reserved liquid, mayonnaise, onion, and horseradish.
Add to vegetables, stirring well.
Spoon into 8-inch square baking dish.
Combine crumbs and butter.
Sprinkle over casserole.
Bake at 375\u00b0 for 15 to 20 minutes or bake in microwave for 5 minutes.
Serves 6 to 8.
