Baked Chicken Reuben - cooking recipe

Ingredients
    4 boneless, skinless chicken breast halves
    salt and pepper to taste
    2 c. sauerkraut, drained
    1 1/4 c. Russian salad dressing
    4 slices Swiss cheese
    1 Tbsp. chopped parsley
Preparation
    Preheat oven to 325\u00b0. Coat a small glass or ceramic baking dish with cooking oil spray. Arrange chicken in dish and sprinkle with salt and pepper to taste. Cover the chicken with sauerkraut. Pour the dressing evenly over all and top with cheese and parsley. Cover and bake 1 hour or until fork-tender.
