Fresh Apple Muffins - cooking recipe
Ingredients

2 c. sifted flour
1/2 c. sugar
3 tsp. baking powder
1 tsp. pumpkin spice mix
3/4 tsp. salt
1/4 c. melted shortening
2 eggs
1/3 c. milk
1 1/2 c. coarsely, chopped unpeeled apples (core apples)
Preparation

Sift first five ingredients into mixing bowl.
Stir shortening, eggs, milk and apples for 15 seconds.
Pour this over dry ingredients.
Mix well.
Fill greased muffin pans 3/4 full. Bake in hot oven at 400\u00b0 for 20 minutes or until done.
(When sides begin to leave pan.)
Serve hot or cool.
