Ingredients

2 eggs
2 1/2 c. milk
1 2/3 c. sugar
2 Tbsp. melted oleo
4 medium sweet potatoes
1 c. grated coconut
1 tsp. flavoring (vanilla or lemon)
Preparation

Beat eggs.
Add sugar and 1 cup of milk and flavoring.
Grate potatoes into remaining 1 1/2 cups milk.
Add coconut and mix remaining ingredients with the milk and potato mixture.
Pour into a greased glass baking dish.
Add melted oleo and cook in slow oven for 45 minutes.
Remove from oven.
Top with marshmallows and return to oven until browned.
