Fish Creole* - cooking recipe

Ingredients
    1 Tbsp. low-fat oleo
    1 medium bell pepper, cut into strips
    1 medium onion, sliced
    2 ribs celery, diced
    2 tomatoes, chopped
    2 Tbsp. lemon juice
    2 lb. fresh fish fillets
    salt, pepper and red pepper to taste
Preparation
    Saute onion, bell pepper and celery in oleo about 5 minutes. Add tomatoes and cook until tender.
    Add 1 tablespoon lemon juice, salt and pepper.
    Set aside.
    Place fish in baking pan sprayed with Pam.
    Lightly sprinkle with salt, pepper and red pepper. Drizzle 1 tablespoon lemon juice over fish.
    Broil until light brown and fork-tender.
    Spoon vegetable sauce over fish.
