Lovely Leftovers - cooking recipe
Ingredients

1 c. celery, cut in large chunks
1 c. bell pepper slices
1 medium onion, sliced
1 Tbsp. oil
1 1/2 c. cooked turkey or chicken, sliced or cut in large pieces
1 can chicken broth
2 Tbsp. cornstarch
salt and pepper to taste
1 large tomato, cut in wedges
Preparation

Saute celery, pepper and onion until tender, but not brown. Add meat and stir until blended.
Add chicken broth and thicken with cornstarch.
Add salt and pepper and simmer about 10 minutes. Remove from heat.
To serve, arrange tomato wedges on top.
Serve over hot, cooked rice.
