Green Tomato Pepper Relish - cooking recipe

Ingredients
    1 gal. green tomatoes
    2 medium onions
    4 large green peppers
    2 large red peppers
    1/2 c. salt
    1 tsp. mixed pickling spices
    3 c. white vinegar
    1 c. water
    2 c. sugar
Preparation
    Wash, chop and mix vegetables.
    Peel onions.
    Discard pepper seeds.
    Add salt; let stand for several hours or overnight.
    Drain liquid and discard.
    Tie spices in a bag.
    Combine all ingredients; simmer for 30 minutes.
    Ladle boiling mixture into hot jars, seal at once and process in boiling water bath for 5 minutes.
    Makes 12 pints.
