Ivory Coast Chicken - cooking recipe

Ingredients
    3 lb. frying chicken
    1 Tbsp. oil
    1 medium onion, diced
    2 to 3 green onions, sliced
    1 large tomato, diced
    1 bay leaf
    1 Tbsp. tomato paste
    3 1/2 c. weak chicken broth
    1/2 c. peanut butter
    1 tsp. salt
    1 tsp. cayenne pepper
Preparation
    Wipe chicken dry; brown in oil 5 to 10 minutes, turning 2 to 3 times.
    Add both kinds of onions, tomatoes and tomato paste; cook 1 minute.
    Stir in chicken broth and bring to a boil.
    Cover and boil 8 minutes.
    Turn heat to low.
    Mix peanut butter with warm water to make a paste and add this to the chicken.
    Add salt, cayenne pepper and bay leaf.
    Simmer 30 minutes.
    This is very spicy; adjust to taste.
    Makes 4 to 6 servings.
