Martha Patch'S Ozark Pudding - cooking recipe

Ingredients
    1/3 c. shortening
    1/2 c. sugar
    1/2 c. grated lemon rind
    1 c. flour
    1 tsp. baking powder
    2 eggs
    1/4 tsp. salt
    3 tart apples
Preparation
    Cream sugar and shortening and add lemon rind.
    Add eggs 1 at a time.
    Beat until fluffy.
    Sift flour, baking powder and salt and add, beating after every addition.
    Pour 1/2 of batter into greased 8 x 8 x 2-inch pan.
    Pare and cut apples into slices. Place over batter and top with remaining batter.
    Sprinkle with topping of 1/2 cup sugar, 1/2 teaspoon cinnamon and 1/4 cup chopped nuts over the top of batter.
    Bake at 350\u00b0 for 50 minutes. Serves 9.
