Baked Meatball With Eggplant - cooking recipe

Ingredients
    2 lb. chopped meat
    1 eggplant, cooked 10 minutes and cubed
    1/2 c. parmesan cheese
    1/4 c. bread crumbs
    1 carrot, grated
    2 eggs
    1 onion, chopped
    1/2 c. chopped basil
    Muenster cheese, sliced into 1 x 2-inch strips
Preparation
    Blend together and shape into 18 meatballs (golf ball size). Fry in oil.
