Carrot Nut Cake - cooking recipe

Ingredients
    1 c. soft margarine or butter
    1 1/2 c. granulated sugar
    1/2 c. packed brown sugar
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. grated lemon peel
    4 eggs
    1 tsp. vanilla
    1/2 c. chopped walnuts (fine)
    3 c. sifted all-purpose flour
    3 tsp. baking powder
    1/2 tsp. salt
    1/2 c. fresh orange juice
    2 c. finely grated carrots
Preparation
    In large bowl or electric mixer, cream butter and sugar.
    Add cinnamon, nutmeg and lemon peel.
    Beat eggs one at a time.
    Stir in vanilla, carrots and walnuts.
    Sift together flour, baking powder and salt.
    Add alternately with orange juice.
    Turn into a greased and floured 10-inch tube pan.
    Bake in 350\u00b0 oven 60 minutes or until cake tester inserted in center comes out clean.
    Cool in pan 5 minutes.
    Turn out of pan and cool completely on wire rack. Spoon Orange Glaze over top, letting it run down sides of cake and decorate with freshly grated carrots.
    Makes 16 servings.
