Apple Stuffed Pork Shoulder - cooking recipe

Ingredients
    1 medium onion, finely chopped
    1/4 c. butter or margarine
    1 tsp. salt
    pinch of pepper
    1/4 tsp. oregano
    2 1/2 c. soft bread crumbs
    1 3/4 c. chopped apples
    1/2 c. boiling water
    boned pork shoulder with deep pocket
Preparation
    Cook onion in butter or margarine until golden brown.
    Combine with remaining stuffing ingredients.
    Set oven for moderate 350\u00b0. Fill pocket in pork shoulder with stuffing.
    Fasten with white twine.
    Place pork on rack in open roaster.
    Roast approximately 40 minutes per pound.
