Ingredients

2 c. sugar
1 c. water
1 c. cider vinegar
2 1/2 tsp. pickling spices
cooked whole beets
Preparation

Mix sugar, water, vinegar and spices.
Boil 5 minutes.
Slice beets and add to boiling syrup.
Simmer for 15 minutes.
Pack in 4 pints.
Seal.
