Buttermilk Oatmeal Muffins - cooking recipe

Ingredients
    1 c. quick cooking oats
    1 c. buttermilk
    1 egg, beaten
    1/2 c. packed brown sugar
    1/4 c. vegetable oil
    1 c. all-purpose flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
Preparation
    In a bowl, soak oats in buttermilk for 15 minutes.
    Stir in egg, sugar and oil.
    Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened.
    Fill greased muffin cups 3/4 full.
    Bake at 400\u00b0 for 16 to 18 minutes or until muffins test done.
    Yields about 8 muffins.
