Tomatoes Picante - cooking recipe

Ingredients
    6 ripe tomatoes, peeled and quartered
    2/3 c. salad oil
    1/4 c. tarragon vinegar
    1/4 c. parsley, snipped
    1 garlic clove, minced
    1/2 c. green onions, sliced
    1/2 tsp. dried thyme
    1 tsp. salt
    1/4 tsp. pepper
    lettuce
    parsley (garnish; optional)
Preparation
    Put tomatoes in deep bowl. In jar, combine remaining ingredients.
    Shake well.
    Pour over tomatoes.
    Chill 3 hours or overnight. Spoon marinade over tomatoes occasionally.
    To serve, drain tomatoes and place on lettuce and garnish.
    Serves 6.
