Beth'S Pot Roast Meat Loaf - cooking recipe

Ingredients
    1 lb. ground lean beef
    2/3 c. evaporated milk (can use regular milk)
    1/3 c. fine dry bread crumbs
    1/4 c. catsup or chili sauce
    1 tsp. salt
    2 tsp. Worcestershire sauce
    1/4 tsp. pepper
    3 medium potatoes
    3 medium onions
    3 medium carrots
    3 tsp. dried parsley flakes
    1 tsp. salt
    few grains pepper
Preparation
    Peel and slice (1/4-inch thick) the vegetables.
    Mix dried parsley flakes, salt and pepper.
    Place vegetables in layers around the meat loaf.
    Sprinkle each layer with a part of the salt mixture.
    Cover pan tightly with foil.
    Bake in a 375\u00b0 oven for 1 hour, or until vegetables are tender.
    Uncover and bake 10 minutes longer to brown meat.
