Carrot Casserole - cooking recipe
Ingredients

2 lb. carrots, cleaned and sliced
1 tsp. salt
1/2 lb. cubed or ground cheese
1/4 c. flour
1/2 c. margarine or butter
1 Tbsp. mustard
1 small onion, chopped or 2 Tbsp. dried onion
1/4 tsp. pepper
1/4 tsp. celery salt
2 c. milk
Preparation

Cook carrots with salt until nearly done.
Drain and save liquid.
Add margarine, mustard, celery salt, pepper, onion and flour to carrots and stir well until carrots are coated.
To liquid from carrots, add enough milk to make 2 cups (usually about half and half).
Place over low heat and add cheese gradually, stirring as cheese melts.
Pour into baking dish.
Cover with corn flakes. Bake at 350\u00b0 for about 1 hour.
May be prepared day ahead and then baked.
Makes about 3 quarts.
Good for community dinners.
