Frioles(Beans) - cooking recipe

Ingredients
    8 c. dried pinto beans
    8 onions, finely chopped
    8 cloves garlic, minced
    3 bay leaves
    4 tsp. crushed red pepper
    1/2 c. salad oil
    2 tsp. salt
    1/4 tsp. black pepper
    4 fresh tomatoes, chopped
Preparation
    Rinse and pick over beans and place them in a large stock pot. Add enough cold water to cover the beans.
    Add half of the onions, half of the garlic, bay leaves and red pepper.
    Cover; bring to a boil, reduce heat and simmer 1 hour.
    Add 4 tablespoons oil and salt, stirring to mix well.
    Cover and continue cooking until beans are soft.
    Add more water as necessary.
    Uncover and cook another 30 minutes.
