Baked Salmon With Shrimp Mirepoix - cooking recipe

Ingredients
    1 fresh butterfly salmon or 2 fillets
    2 Tbsp. butter or margarine
    1/4 c. finely chopped carrot
    2 Tbsp. finely chopped onion
    2 Tbsp. finely chopped celery
    1/4 c. diced raw fresh shrimp (1 lb. equals about 2 c.)
    1 Tbsp. finely chopped parsley
Preparation
    Rinse salmon in cold water; pat dry.
    In lightly oiled 10 x 6-inch baking dish, place salmon, skin side down.
    In small saucepan over low heat in hot butter, cook vegetables until tender.
    Spread vegetable mixture evenly on fish; top with shrimp and parsley.
    Bake at 350\u00b0 for 20 minutes or until salmon flakes easily with a fork.
    Makes 2 servings.
