Mary Alyce'S Fluffy Rice Pudding - cooking recipe

Ingredients
    1/2 c. long grain rice
    1/2 c. sugar
    3 c. milk
    1/4 c. margarine
    2 eggs, separated
    1 tsp. lemon extract
Preparation
    Combine rice and milk in top of double boiler. Cook over hot water for 45 minutes or until rice is tender. Stir in sugar, margarine and a pinch of salt. Beat the egg yolks.
    Add a little of the hot mixture to yolks, then stir this into the rice mixture. Cook 5 minutes, stirring constantly.
    Remove from heat.
    Stir in extract.
    Beat egg whites until stiff but not dry. Fold into rice mixture.
    Serve warm or cold.
    Makes 6 servings.
