Sherried Apricot Soup - cooking recipe

Ingredients
    3 (1 lb.) cans apricot halves
    1/4 c. superfine sugar
    1 c. sour cream
    1/4 c. fresh lemon juice
    1/4 c. sweet cream sherry
    3 Tbsp. orange juice concentrate
    mint leaves (optional)
Preparation
    Drain apricot halves and place in a food processor. Add the remaining ingredients and pulse on and off until blended. Chill until ready to use. Garnish with fresh mint leaves.
