Hoppin' John - cooking recipe

Ingredients
    2 c. black-eyed peas or beans, washed and drained
    1/2 lb. sliced bacon
    1 onion, minced
    2 c. rice
    1 Tbsp. salt
    1/4 tsp. pepper
    1 red hot pepper
Preparation
    Bring peas and 3 quarts water to a boil.
    Boil 2 minutes. cover pan and let sit for 1 hour.
    Cut up bacon and cook until brown; add onions and cook until golden.
    Pour bacon mixture into peas.
    Cover and simmer until peas are tender, about 1 hour.
    Stir in rice and seasonings.
    Cook, covered, without stirring, until rice is tender.
    Makes 8 to 10 servings.
